Easy Recipes for Busy Moms

Air Fryer Pork Chops: 

Ingredients:

  • 1 Cup Almond Flour
  • 1 Cup Parmesan Cheese
  • Seasoning ( I like Paleo Powder or Kinders)
  • 4 Bone in or 6 Boneless Pork Chops

Instructions:
In a large bag, mix together the flour, cheese, and seasonings.
Shake until the pork chops are fully coated.
Place in air fryer at 360 degrees for 12 minutes.

Tip: Make sure you only put one later in the air fryer at a time.

 

Air Fryer Chicken Thighs:

Ingredients:

  • 4-5 Chicken Thighs
  • BBQ Sauce or Seasoning of your choice


Instructions:
Place chicken thighs in a bowl or bag and add as much bbq or seasoning as your would like to coat all the thighs. Place skin side down in the air fryer for 13-15 minutes. Then flip and cook for another 13-15 minutes.

 

Crockpot Ribs:

Ingredients:

  • Pork ribs  (your choice of what kind, usually go for what's on sale)
  • Dr Pepper
  • BBQ Sauce
  • Optional : all purpose seasoning


Instructions:
Mix the Dr Pepper and BBQ to the consistency and amount you prefer. Add in the optional seasoning if you would like. I like to cut the ribs before putting them in the crock pot, but you can also do it after they are cooked. Make sure ribs are coated in the sauce. You can always let them marinate in the sauce mixture over night for some extra flavor. Pour a little DP in the bottom of the crockpot to prevent burning. add in ribs and any leftover sauce (even if you have to make more, it's important to have the extra moisture). Set your crockpot for the time you need. I put them in in the mornings so I would do low for 8 or 10 hours. When I get home from work I add some more BBQ sauce and let it sit on warm until supper. 

 

Lazy Lasagna

Ingredients:

  • 1 Bag Frozen Beef Ravioli 24-25 oz
  • 1 Jar Pasta Sauce 24 oz
  • Shredded Parmesan Cheese 8oz
  • Italian Seasoning

Instructions:
Preheat Ovet at 400 degrees
Add a little sauce to the bottom of your pan. Layer some ravioli, sauce, and cheese. Repeat. 
Sprinkle some Italian seasoning on top, then pop in the oven cover with foil for 30 minutes. Remove the foil and bake for another 15 minutes.
Serve with my favorite Italian side salad below.

 

Lemon Parm Salad:

You can alter the size of this salad by how many people you are serving. 

Ingredients:

  • Chopped Romaine Lettuce 
  • Extra Virgin Olive Oil
  • Lemon Juice
  • Grated Parmesan
  • Lemon Pepper Seasoning (or salt and pepper)


Directions:
     Amounts are going to depend on how big of a salad you would like.
     Put chopped lettuce in a bowl.      
     Add lemon juice and olive oil. Start with just a little, you don't want to go overboard with the lemon juice and oil.  
     Sprinkle cheese and seasoning on top.
     Mix until the the all the lettuce has everything on it.
      I always taste test a piece to see if I need more of anything. 

Hearty Southwestern Chili:

Ingredients:

  • 1lb Ground Beef
  • 5oz Frozen Chopped Onion (1/2 bag)
  • 5oz Frozen Green Bell Pepper (1/2 bag)
  • 2 15.5oz Cans of Chili Beans
  • 1 Can Kidney Beans Rinsed (16oz)
  • 1 15oz Can of Corn
  • 1 Can Diced Tomatoes With Green Chilis 
  • 1 8oz Can of Tomato Paste
  • Chili Powder and Salt to Taste

Directions:
     Throw all ingredients in your crockpot and set on your preference. I put mine on low all day. Start in in the morning before work and put it on warm when I get home.

Easy Sides:

Frozen Veggies- You can microwave or airfry them. So easy! I like putting Kinder's Buttery Steakhouse seasoning on them. Makes eating veggies yummy!
Instant Mashed Potatoes- Mashed taters in minutes.
Canned Baked Beans- Just warm them up in the microwave.
There are so many prepared sides by the deli at grocery stores.
